Recipe Tuesday: Texas Caviar for the Big Game

[Let’s just pretend that this is Tuesday – I forgot to hit publish… ]

This is an awesome dip. The time I was introduced to it, in Iowa, my best friend and I sat in the kitchen of a friend of a friend’s party and ate almost half of the bowl ourselves. It is THAT good.

Texas Caviar

1 tomato, diced

1 (each) yellow pepper, green pepper, and orange pepper, diced

1 small yellow onion, diced (more or less to taste)

15 oz. can black beans, drained and rinsed

15 oz. can black eye peas, drained and rinsed

15 oz. can yellow corn

15 oz. can white corn (or hominy)

16 oz. bottle of Italian dressing (NOT Zesty Italian)

Mix everything together. Serve with your favorite tortilla chips.

Enjoy!

The longer this sits together before serving, the more the flavors blend. But, don’t worry, it’s still very good right away.
