Easy Roasted Tomatoes
Our family loves these tomatoes. And, I don’t just mean Brian and I (and Grace), my EXTENDED family loves them as well. And how can you go wrong with something SO easy and SO yummy?
It’s a simple matter of slicing tomatoes in half (we use Sweet Campari Tomatoes most often, but Roma work really well, too);
scoop out most of the insides;
sprinkle with a healthy amount of Ranch powdered dip mix (I can usually make this four times with one packet);
cover you baking sheet or grill pan with foil; grill or broil for about 10 minutes or until they look like this.
The juices from the tomatoes caramelize with the Ranch powder and creates a soft crust on the tomatoes. They do flatten out to about 1/8th inch thick and will be very soft.
