Recipe Tuesday: Mashed Cauliflower

With Brian’s Type 2 Diabetes diagnosis, we have gotten very creative with vegetables. One thing we tried was substituting mashed potatoes – a typical dinner staple – with mashed cauliflower. I LOVE mashed potatoes, so I was VERY skeptical. I admit, I am now a believer.

Mashed Cauliflower


1 head of cauliflower, trimmed and cut into pieces

1/2 c. sour cream OR plain greek yogurt

2 Tbsp. unsalted butter

1/4 c. milk

salt and pepper to taste


1. Steam cauliflower until fork tender.

I use our rice cooker/steamer and it takes 17 minutes. You can also steam the piece in a stove-top steamer basket or in a covered microwave-safe bowl.

2. Place steamed cauliflower in a blender. Add remaining ingredients. Pulse a few times to break up larger pieces in the bottom.

Continue blending ingredients just until creamy. The mixture will resemble very creamy mashed potatoes.
